Flowers of zucchini are one of the my favourite vegetables in the summer period. Now summer is ending and there is the last flowers of zucchini to cook. One delicious recipes that you can prepare with them is spaghetti with anchovies and flowers of zucchini. INGREDIENTS (for 4 people):
320 g of Spaghetti
8 Anchovies in oil
7 – 8 Flowers of Zucchini with small zucchini
Some breadcrumbs
1 / 2 Onion chopped
4 Tablespoons of Extra virgin olive oil
Salt
PREPARATION TIME: 10 minutes
COOKING TIME: 20 minutes
WINE: Vermentino di Sardegna Doc (White Wine)
PREPARATIONBring to boil the salted water for pasta. Preheat the extra virgin olive oil in a pan, add the chopped onion and let it brown. Then add the anchovies and cook for about 3 – 5 minutes.


In the mean time clean the flowers of zucchini and the zucchini,

cut them in small pieces. Now add the flowers of zucchini and let them wilt,

then add the zucchini and let them cook for about 10 minutes.

Control if the salt is enough. Add the breadcrumba and if the dressing is too dry add some water.

When water boils cook the spaghetti as indicated on the packaging, drain them and pour them in the pan where there is the dressing. Sautè them and serve hot.

This is a delicious Italian recipes and this is the ideal period to cook it. In my kitchen garden the zucchini and the flowers of zucchini are growing, so I can pick them fresh and cook immediately. I like so much the possibility of prepare Italian dish with fresh vegetables: the recipes are better. This is a tasty recipe that you can prepare as a second course but also as an appetizer.
INGREDIENTS (for 4 – 6 people):
150 g of Flour with yeast
200 – 250 ml of Milk
2 Egg whites
2 Zucchini
5 Flowers of zucchini
Extra virgin olive oil for fry
A pinch of salt
PREPARATION TIME: 15 minutes
COOKING TIME: 15 minutes
WINE: Colli di Luni Vermentino Doc (White Wine)
PREPARATIONMix in a bowl the flour with the salt, then add little by little the milk in order to not make lumps and mix until you obtain a creamy mixture, like that shown in the picture.


Beat the egg whites till stiff then add them to the creamy mixture and mix.

Now prepare the zucchini and the flowers of zucchini.

Clean them, chop the flowers of zucchini and then with the help of a grater cut the zucchini in order to obtain thin strips as shown in the picture below.

Mix the zucchini and the flowers of zucchini

and add them to the creamy mixture.

Heat the extra virgin olive oil in a pan, when it is hot place in it the mixture with the help of a spoon.

Let the fritters fry until they become slightly brown.
When they are ready let them drip from oil over a kitchen paper and then serve warm.

Flowers of zucchini are vegetables typical of the spring and the summer period in italy. They are sweet and with them you can prepare simple italian recipes. Indeed you can prepare a tasty first course like the following recipe that is made with flowers of zucchini, zucchini and cream, but you can use them also to prepare a second course or an appetizer like the fritters of flowers of zucchini or the flowers of zucchhini stuffed.
INGREDIENTS (for 4 people)1 Zucchini
10 Flowers of Zucchini
1 slice of Speck
160 gr of pasta (type mezze maniche)
125 ml of Cream
1/4 of Onion
3 Tablespoons of Extra-virgin-oil
Salt
Pepper
PREPARATION TIME: 15 minutes
COOKING TIME: 15 minutes
DIFFICULTY: easy
WINE: Colli Bolognesi Barbera ( Red Wine)
PREPARATIONLet salted water boil for pasta.
Clean the Flowers of Zucchini and cut them into pieces.

Clean, peel and cut into pieces the Zucchini.

Cut speck into small cubes. Heat 3 tablespoons of extra virgin olive oil in a pan, add onion and the cubes of speck and let them browned.

Then add the zucchini and the flowers of zucchini and let it cook for about 5 minutes, season with salt and pepper and complete cooking.

Add the cream and stir it with the other ingredients and continue the cooking for about 5-10 minutes.

When pasta is cooked, pour the sauce on it, mix and serve hot.
