

Lasagne with rocket pesto: very simple and easy to make and delicious to eat!
INGREDIENTS (for 4 people)
400 g of Pasta (Lasagne)
100 g of Rocket
40 g of Pine nuts
1/4 of an Onion
Some pieces of Parmesan (Italian cheese)
3 Tablespoons of extra virgin olive oil
1/2 Glass of water
50 g of Butter
500 ml of Milk
2 Tablespoons of flour
Some Nutmeg
Salt and Pepper
Marjoram
PREPARATION TIME: 20-25 minutes
COOKING TIME: 30-35 minutes
DIFFICULTY: medium
WINE: Pigato Ligure (White Wine)
PREPARATIONWash, peel the onion and chop it. Heat 3 tablespoons of extra virgin olive oil, add in chopped onion and the pine nuts and let them brown.

Wash and dry the rocket and add it to the pan. Add 1/2 glass of water and cook for about 5 minutes until the rocket wilts. Season with salt, pepper and some marjoram.

Blend the mixture, add some pieces of Parmesan and continue to blend until the mixture becomes a sauce.

Now it's time to prepare some besciamella! In a pan melt the butter, then add the flour and mix. Add some milk, little by little, and continue to mix until you obtain a kind of cream. Pay attention not to make lumps. Then add the rest of the milk, a pinch of salt and some nutmeg. Let the mixture simmer while continuing to stir, until the mixture thickens.

When the besciamella and the pesto are ready, spread the surface of a baking pan with 2-3 tablespoons of besciamella, then make a layer with pasta, spread with 2-3 tablespoons of pesto and with 2-3 tablespoons of besciamella. Continue in this way until the baking pan is full (make about 4-5 layers).

Bake for about 30 minutes until the surface is golden.

Who said pesto must be made with basil? Here is a delicious pesto made of rocket salad!
INGREDIENTS (for 2 people)
160 g of Pasta (Spaghetti)
100 g of Rocket salad
40 g of Pine Nuts

1/2 Glass of water
Salt & Pepper
Marjorama
2 Sweet cherry tomatoes
PREPARATION TIME: 10 minutes
COOKING TIME: 15 minutes
DIFFICULTY: medium
WINE: Pigato Ligure (White wine)
PREPARATIONWash, peel 1/4 of onion and chop it. Heat 3 tablespoons of extra virgin olive oil in a pan, add chopped onion and pine nuts and let them brown.

Wash and dry 100 g of rocket salad, put it into the pan and cook it for 5 minutes until rocket wilt. Add 1/2 glass of water and cook until water boils. Season with salt, pepper and some marjorama.

Then whip all, add some pieces of Parmesan and continue to whip until the mixture become a sauce.

Boil some water with salt for pasta, add pasta and cook it for 8 minutes.
When spaghetti are ready, pour pesto on them, mix and serve hot with 1 sweet cherry tomato.

This recipe is for an appetizer made of navy beans (cannelllini), rocket salad and shrimps.
INGREDIENTS (for 2 people)
A can of navy beans (cannellini)
A bunch of rocket salad
100 g of Shrimps
Extra virgin olive oil
Salt
Pepper
PREPARATION TIME : 10 minutes
COOKING TIME: 5 minutes
DIFFICULTY: easy
WINE: Verdicchio Castelli di Jesi (White Wine)
PREPARATIONClean and boil shrimps into water for 5 minutes. Drain them and wait until they get cool.

Clean, dry and cut some rocket salad.

Drain and clean beans.

In a bowl join the beans, the shrimps and the rocket salad. Dress with a little bit of extra virgin olive oil, a pinch of salt and of pepper.

If you want to prepare something light, fast and, at the same time, tasteful, this is the ideal dish. This recipe is for an antipasto made of green apples, rocket salad, walnuts and parmigiano (Italian cheese).
INGREDIENTS (for 2 people)
1 Green apple
7-8 Walnuts
Flakes of Parmigiano (Italian cheese)
A bunch of rocket salad
Extra virgin olive oil
PREPARATION TIME: 10-15 minutes
DIFFICULTY: easy
WINE: Verdicchio (White Wine)
PREPARATIONWash, peel and cut the apple in cubes.

Crack and chop the walnuts.

Clean, dry and cut some rocket salad.

Cut the Parmigiano in flakes.

Unify the apple pieces, the rocket salad and the walnuts in a bowl. Add the Parmigiano flakes and dress with a little bit of extra virgin olive oil.
